Elysium Botanicals produces small batch, fine wines.

2018 Merlot

Inviting and layered, with ripe black cherry, plum, and blackberry compote up front. Subtle notes of cocoa powder, vanilla bean, and baking spice mingle with hints of cedar, tobacco leaf, and dried herbs... classic markers of a well-developed Columbia Valley Merlot.

2018 Merlot is drinking beautifully now, but it also has the structure to continue evolving for another 5 - 6 years. Over time, expect the fruit to soften into more dried cherry and fig notes, with increased savory tones of leather, forest floor, and cedar,

2020 Elysium Chardonnay Select

Crafted from premium selected grapes, this 2020 Chardonnay balances purity of fruit with subtle oak influence. Half of its aging took place in neutral oak barrels, allowing gentle oxygen exposure and texture developed without masking the varietal character.

Bright notes of ripe pear, golden apple, and Meyer lemon peel lead with soft layers of white peach, honey suckle, and hint of toasted almond. The neutral oak adds nuance, think light brioche and vanilla bean rather than overt wood.

2023 Petite Sirah

Petite Sirah is a distinctive grape with a story as bold as the wine it produces. Despite its name, it isn't a "small" version of Sirah - it's a natural cross between Syrah & Peloursin, created in the late 1800s. What makes a 2023 Petite Sirah especially unique is both the grape itself and its modern scarcity. Petite Sirah represents less than 1% of total vineyard plantings in the U.S..

Long, powerful, and lingering, with waves of dark fruit, spice, and a savory mineral edge.

This Petite Sirah, sourced form Lodi, California, is bold..rare...and unapologetically expressive - this 2023 Petite Sirah is a striking example of a lesser-seen varietal, offering intensity, depth, and character that few grapes can rival.

2024 Tempranillo

Tempranillo grapes sourced from the Columbia Valley

Aged 9 Months in Neutral French Oak

Fresh yet layered, opening with bright red cherry, raspberry, and wild strawberry. Subtle secondary notes of dried rose, islet, and orange peel emerge, followed by hints of leather, clove, and soft vanilla from neutral oak aging. Medium bodied & elegant with smooth, supple texture. Juicy flavors of red plum, cherry and pomegranate are framed by fine-grained tannins and lively acidity,

The neutral oak contributes gentle roundness and subtle spice without overshadowing the fruit, allowing the varietal character and Columbia Valley territor to shine.

Very smooth, velvety.
